Campfire Corn and Tomato Gnocchi

Gnocchi is our go-to summer staple that goes well with every meal! This no boil potato pasta cooks in under 20 minutes and takes on incredible flavour of each dish. This campfire recipe is easy to make both at home and camping adventures. 

 

Ingredients

  • 1 packet of gnocchi
  • 4 ears of corn
  • 2 cups of cherry tomatoes
  • Fresh Basil 
  • 2-4 garlic cloves
  • 2 TBSP EVOO (we loved the Zoe Basil Infused Olive Oil for this one!)
  • Salt and ground black pepper to taste
  • Grated Parmesan, for serving

Instructions

  1. Fire up your Coulee (we used the Coulee Colorado for this camping trip)
  2. Cut kernels off your corn and add to a large bowl with gnocchi
  3. Chop up basil and garlic and add to bowl
  4. Drizzle on EVOO and stir
  5. Add 1/2 the mixture to a tin foil square and season with salt and pepper 
  6. Cover, close sides and make second tin foil packet
  7. Add both packets to grill over warm flames 
  8. Cook for 15-20 minutes
  9. Remove from grill, add back to bowl, sprinkle on parmesan and serve!
